In a large pot, dump mussles with juices into pot and heat at medium temp.
Add all ingredients into pot and cover.
Let simmer for about 5 minutes. Remove cover just once and stir mussels around, bringing the ones on the bottom to the top. You should notice by now that the mussels have started to open up. Cover and let steam for another couple mins.
Once the majority of the mussels have opened and have taken on a dark yellow/ orange colour, they are ready to eat. You can add some salt and pepper but mussels are naturally salty from the ocean.
