Breakfast B.L.T w Avocado Aioli

egg blt on naan


  • 1 egg, poached
  • 1 tomato, sliced
  • 1 tbsp vinegar
  • boston bibb lettuce (or which ever you prefer)
  • bacon
  • naan bread
  • salt n pepper


  • 1 tbsp mayo
  • 1/2 avocado, mashed
  • 1/2 tsp sesame oil


  1. Heat water and vinegar in a pot for your poached eggs. You don’t want water to be boiling, just lightly bubbling. Crack eggs in a bowl( no more then 2 at once), set aside.
  2. Meanwhile cook bacon to your liking in a separate pan.
  3. Mix ingredients for aioli and slice tomato.
  4. Once water is bubbling, stir water in a circular motion creating a whirlpool. take eggs and drop into vortex. if you like soft poached boil for 4 mins, med 6 mins (as shown in picture) and hard 7+. Once cooked, remove and place on paper towel to soak up some moisture.
  5. Toast naan bread and spread aioli on top. Build your sando which ever way you prefer. Season with salt n pepper.
