Breakfast Hash Skillet

hash skilletIngredients:

  • 4 eggs
  • 2 large potatoes, cubed
  • 4 strips bacon, cooked and cut into pieces( quick route, use pre cooked bacon bits)
  • 1 cup gouda cheese, shredded
  • 1 red pepper, diced
  • 1 onion, sliced (or diced)
  • pinch of thyme
  • pinch of salt in pepper
  • fresh parsley for garnish

Instructions:

  1. Prep all ingredients as directed. Cut Potatoes, shred cheese, dice pepper, etc. Pre heat oven to 375 degrees.
  2. Heat Cast Iron pan on medium heat. Add enough oil to cover total surface of pan. When the oil starts to smoke, add in potatoes and onion. Season your potatoes with thyme, salt n pep. Cook until potatoes are lightly browned on both sides, or to your liking.
  3. Your oven should be ready to go. Next create 4 circular spaces within your potatoes ( move them out of the way), this is where you will place your raw eggs. Crack eggs into these spaces. Add in pepper and bacon, and place In the oven for about 5 minutes.
  4. Remove to add cheese. Place back in for 3 minutes (or longer, depending on how you like your eggs)
  5. Once cheese is melted, remove and add fresh parsley for garnish.
  6. Take photo of your masterpiece & Enjoy!
