The first time I tried a grilled salad I was blown away. The smoky taste of the lettuce was life changing. I find it very hard to make a salad any other way now. Aside from the smoky taste, what I like about this salad is that you control the size of the bite you’re taking. Ever eat a salad that has large pieces of lettuce that you can’t fit a bit into your mouth? Not enjoyable.
Ingredients:
- 1 head of Romaine Lettuce
- Fresh bacon bits
- fresh Parmesan
- croutons
- olive oil
- salt n pepper to taste
Caesar Dressing:
- 1/2 cup Mayo
- 1/2 cup greek yogurt
- 1/2 freshly grated parmesan cheese
- 2 tbsp. lemon juice
- 1 tsp worcestershire
- 1 tbsp. minced garlic
- 1/2 tbsp. Dijon mustard
- salt n pepper to taste
**Dressing will last 1 week in the fridge.
Instructions:
- First Mix all ingredients for dressing in a mason jar and shake well. Place in fridge.
- Next, turn on bbq.
- While bbq is heating up, slice Romaine lettuce in half, length wise. Brush the flat sides with oil and season with salt n pepper.
- Place on bbq, flat side down for 1 minute.
- Lettuce should be slightly charred. Remove from grill.
- Add bacon bits, croutons, fresh parm and dressing.
- ENJOY!
