Tossed Tuscan Salad


I could eat this salad everyday and not get tired of it. The perfect Salad to bring to work or add to a picnic basket. The longer the vinaigrette sits, the veggies soak it in. YUM.


  • 1 tomato, sliced
  • 1 yellow pepper, sliced
  • 1 cucumber, sliced
  • 1 red onion, sliced
  • green beans, ends chopped off
  • 1 bag of arugula (or spinach)
  • 1 lemon
  • capers
  • salt n pepper to taste


  • 2 tbsp. olive oil
  • 1 tbsp. lemon juice ( fresh is best )
  • 1/4 tsp minced ginger
  • 1 tsp minced garlic
  • salt n pepper
  • pinch of dried parsley
  • pinch of oregano


  1. Wash and Chop veggies as suggested or which ever way you prefer, honestly it doesn’t matter.
  2. Add all veggies to a glass bowl for tossing and season with salt and pepper.
  3. Add vinaigrette and enjoy.
